Couscous Salad

  1. Bring chicken stock to boil in a medium saucepan over high heat.
  2. Stir in couscous and boil for one minute.
  3. Remove from heat and allow to stand for five minutes until liquid is absorbed.
  4. Pour couscous into a large bowl and fluff with a fork.
  5. Add remaining ingredients and toss to combine.
  6. Serve warm, at room temperature or chilled.
