Aioli

  1. Crush cloves with s&p in pestle to form thick paste
  2. Whisk together paste, yolks, vinegar & mustard
  3. Add oils slowly while whisking - pour slowly from height
  4. Add squeeze of fresh lemon juice to complete

garlic, lemon, egg yolks, veg oil, olive oil, salt, white wine vinegar
