Apple Masala Baked Beans Recipe
- 1 x onion minced
- 3 clv garlic crushed
- 3 x cm root ginger
- 3 Tbsp. sunflower oil for frying
- 1/4 tsp turmeric
- 3 tsp garam masala (freshly grnd is preferable)
- 1 lrg Bramley cooking apple peeled cored and minced
- 4 sm red chillies kept whole
- 1 Tbsp. sweet mango chutney
- 3 x tomatoes minced
- 1 Tbsp. sultanas
- 150 ml chicken stock
- 500 gm cooked white haricot beans or possibly butter beans
- 1 x salt and pepper
- Blend the onion garlic and ginger in a processor to a paste add in a dash of water to assist the blending.
- Fry the mix in the oil with the turmeric and 2 tsp of the garam masala till lightly browned.
- Add in all the remaining ingredients season and simmer till reduced and thickened.
- Stir in the remaining garam masala before serving.
- Great with roast duck sausages or possibly lamb chops.
- Serves 4 as an accompaniment
