Taco Sheppard's / Shepherd's Pie

• 1 12 lbs ground beef
• 0.5 (1 1/2 ounce) package taco seasoning
• 8 ounces salsa
• 2 (3 1/2 ounce) packages Hungry Jack cheesy homestyle easy mashed potatoes
• 1 (16 ounce) package frozen mixed vegetables
• 1 cup cheddar cheese, shredded (I used Mexican Blend)

1. Brown ground beef and drain, return to pan.
2. Add taco seasoning and salsa, stir to combine.
3. Prepare mashed potatoes as directed on package.
4. In a casserole dish, layer first a thin layer of mashed potatoes.
5. Next add half of the ground beef mixture, then half the frozen vegetables.
6. Sprinkle 1/2 cup of cheese on top of the vegetables.
7. Next layer again, potatoes, beef mixture, vegetables and cheese.
8. Top with a final layer of mashed potatoes.
9. Cover with foil and bake at 350 for 30 minutes.
