Blender Cheesecake

  1. Pour the boiling water into a blender container.
  2. Add the gelatin.
  3. Process until dissolved.
  4. Add the lemon juice and half and half the cottage cheese.
  5. Process until smooth.
  6. Add the remaining cottage cheese.
  7. Process until smooth.
  8. Pour into a large bowl.
  9. Blend in the 10oz whipped topping.
  10. Pour into the pie shell.
  11. Top with fresh fruit and additional whipped topping if desired.
