Beets in Orange Sauce

  1. Preheat oven to 400F.
  2. Wrap 2 beets together in foil.
  3. Repeat with remaining beets.
  4. Place on baking sheet.
  5. Bake until tender, about 1 hour 15 minutes.
  6. Cool.
  7. Peel beets.
  8. Cut each into 8 wedges.
  9. Combine beets and remaining ingredients in medium nonaluminum saucepan.
  10. Simmer over medium heat until sauce is syrupy, stirring often, about 8 minutes.
  11. Season with salt and pepper.
  12. (Can be made 1 day ahead.
  13. Chill.
  14. Rewarm over low heat, stirring often.)
  15. Serve hot.
