Creamy Rice Pudding

  1. Bring water to a boil in a large saucepan.
  2. Add rice, stir to combine.
  3. Cover.
  4. Bring back to a boil, reduce heat and simmer for 15 minutes or until water is absorbed.
  5. Add sugar, evaporated milk, water and raisins.
  6. Stirring, bring to a boil.
  7. Cover, reduce heat to low simmer and cook for 1 - 1/2 hours, or until mixture is very creamy.
  8. Stir occasionally.
  9. Remove from heat and stir in vanilla.
  10. Transfer to a serving bowl and sprinkle with cinnamon.
  11. Delicious hot or cold.
