Spicy Fried Ginger Chicken
- 500 grams boneless chicken breast, cubed
- 4 tbsp ginger, finely chopped
- 1 tbsp cornstarch
- 1 tbsp crushed red chilli or red chilli paste
- 1 tsp crushed black pepper
- 1 egg white
- 1 tbsp garlic, chopped finely
- 1 sprig of shallot or spring onion, finely chopped
- 1 dash of soy sauce
- 1 dash of vinegar
- 1 tsp salt to taste
- 2 ml or a few drops of food color, red
- 2 cup oil to fry
- Mix all the ingredients, except the oil and refrigerate.
- Allow the chicken to marinate for atleast an hour.
- Deep fry the chicken, when ready to serve.
- Serve with a side of sweet n sour cucumbers, sweet chilli or apricot sauce.
