Baked Bananas with Pineapple and Honey
- 6 small firm ripe bananas
- 1/4 cup honey
- 1 tbsp lemon juice
- 2 tsp cornstarch
- 2 tbsp butter
- 1 can ( 8 ounces ) crushed pineapple in pineapple juice
- Peel bananas and place in a single layer in baking dish just large enough to hold them.
- Preheat oven to 375F.
- Combine pineapple with juice, honey, lemon juice and cornstarch in a bowl; pour over bananas.
- Dot with butter.
- Bake for 20 minutes or just until bananas are softened and sauce is bubbly.
