Cajun Smothered Chicken
- 4 whole Boneless, Skinless Chicken Breasts
- 4 slices Colby Jack Cheese
- 8 slices Bacon (cooked)
- 1 cup Mayonnaise (not Miracle Whip!)
- 1 Tablespoon Spicy Brown Mustard
- 2 teaspoons Cajun Seasoning
- 1 teaspoon Lemon Juice
- 1/2 cups Thinly Sliced Green Onions
- Mix mayonnaise, cajun seasoning, mustard and lemon juice and set aside (you will have more of this cajun mayo mixture than you need for this recipe, so divide it in half and save the other half for a sandwich or ten later).
- Place the chicken breast in an oven-proof baking dish (I use a 9x13 glass dish) and cover completely on all sides with the cajun mayo.
- Cover and let marinate for an hour in the fridge.
- Preheat oven to 350 degrees.
- Uncover chicken and cook for 30 minutes or until the juices run clear.
- Top chicken with two strips of bacon and add green onions to taste.
- Top with a slice of colby-jack and put back into the oven.
- Bake for another 5 minutes or until the cheese melts.
- Serve piping hot with the side dish of your choice (I recommend potatoes of some sort!)
