Southwest Stuffed Potatoes
- 6 large baking potatoes
- 1 lb hot sausage
- 1 (16 ounce) package Velveeta Mexican cheese
- 1 (10 ounce) can tomatoes and green chilies, drained
- 1 cup Greek yogurt
- Bake potatoes wrapped in foil on 375 for 1 hour and 15 minutes.
- brown sausage and drain.
- add cheese and stir til melted.
- add tomatoes and yogurt.
- cut potatoes in half and scoop out middles gently.
- mix potato innards with everything else.
- add back into potato skins.
- return to oven for 10 minutes.
