New Potato Salad
- 3 pounds new potatoes, cooked
- 4 eggs, hard-boiled and sliced
- 3 tablespoons coarse-grain mustard
- 1 red onion
- 4 tomatoes, peeled, seeded, diced
- 1/4 cup chopped celery
- 1 tablespoon chili powder
- 1/2 cup olive oil
- 3 ears corn, roasted and shucked
- 1 poblano chili, minced
- In a large bowl blend all ingredients.
- Season with salt and fresh cracked pepper.
- Garnish with chopped parsley if desired
