Corn Relish Salad
- One 16-ounce package frozen corn kernels, thawed
- 1 small red bell pepper, finely diced
- 2 large celery stalks, finely diced
- 2 scallions, green parts only, thinly sliced
- 1/2 cup natural low-fat vinaigrette, or to taste
- Salt and freshly ground pepper to taste
- Combine the ingredients in a serving container and toss well.
- Serve at once or refrigerate until needed.
