Five minute sponge recipe

  1. Preheat the oven to 170C/Gas 3.
  2. Mix the flour, sugar, baking powder and zest together thoroughly in a mixing bowl, then whisk in the egg.
  3. Slowly add the milk and whisk until the mixture is smooth, then pour into individual greased ramekins.
  4. Place the ramekins on a baking tray and bake in the oven for 15 minutes.
  5. Remove the ramekins and rest for 5 minutes before serving with cream.
  6. If you wanted to posh the sponges up a bit you could turn them out onto a plate and add a few berries to proceedings.
  7. Or, try putting a generous blob of lemon curd in the bottom of each ramekin before adding the sponge mixture, or stir some blueberries through the sponge mixture before baking.
  8. You can also use orange zest instead of lemon.
