Black Bean & Bacon Quesadillas

  1. Mix first 3 ingredients until well blended.
  2. Spoon evenly onto centers of tortillas; top with bacon slices.
  3. Fold in half to enclose filling.
  4. Heat large nonstick skillet on medium-high heat.
  5. Add quesadillas, 2 at a time; cook 2 to 3 min.
  6. on each side or until lightly browned on both sides.
  7. Repeat with remaining quesadillas.
  8. Serve topped with sour cream and cilantro.
