Bean And Beef Ragout Recipe
- 2 pound beef stew meat cut in 1 1/2 inch cubes
- 2 tbsp. cooing oil
- 1 (16 ounce.) tomatoes
- 1 c. minced onion
- 1 c. dry red wine
- 2/3 c. water
- 1 teaspoon sugar
- 1 clove garlic, chopped
- 1 1/2 teaspoon salt
- 1/4 teaspoon dry thyme, crushed
- 1/8 teaspoon pepper
- 1 bay leaf
- 3 c. pared and cubed potatoes
- 1 (15 ounce.) kidney beans, liquid removed
- 1 (16 ounce.) green beans, liquid removed
- 1 tbsp. cornstarch
- In Dutch oven brown beef in warm oil.
- Add in next 10 ingredients.
- Bring to boil; reduce heat.
- Simmer covered for 1 1/2 hrs.
- Add in potatoes, cook 30 min more.
- Remove bay leaf.
- Add in beans.
- Combine cornstarch and 2 Tbsp.
- water; add in to stew.
- Cook and stir till bubbly.
- Makes 8 servings.
