Tempting Thai Turkey Salad

  1. In microwave-safe bowl, combine yogurt, creamy peanut butter, brown sugar, soy sauce and a dash each of ground ginger and hot pepper sauce.
  2. Loosely cover with plastic wrap; microwave at 50 percent power for 1 to 1 1/2 minutes, until sugar dissolves.
  3. Set aside to cool.
  4. In large bowl, combine salad greens, turkey, mango, bell pepper and sliced scallions.
  5. Combine salad and dressing; toss.
  6. Top with chopped peanuts.
