Baked Stuffed Radicchio Recipe

  1. Preheat oven to 350 degrees.
  2. Halve the radicchio heads down the middle.
  3. Cut out hard core and remove several layers of inner leaves to hollow out a small hole for stuffing.
  4. Chop up radicchio leaves and combine with goat cheese, pistachios, shallots, chervil and extra virgin olive oil; season to taste with salt and black pepper.
  5. Fill radicchio halves with stuffing.
  6. Bake till warm and golden brown, about 30 min.
  7. This recipe yields 4 servings.
