Coconut Spinach
- 4 ounces bacon, diced
- 3 teaspoons garlic, diced
- 1 small red onion, thinly sliced
- 2 lbs fresh Baby Spinach
- 12 cup coconut milk, unsweetened
- 2 teaspoons cayenne pepper, ground
- 12 teaspoon sea salt
- 18 teaspoon black pepper, cracked
- Brown bacon in a saute pan until just crisp.
- Add onion and saute until translucent.
- Add garlic and saute, just until lightly golden.
- Add spinach, tossing until just wilted.
- Add milk, cayenne pepper, salt and pepper.
- Stir until incorporated.
- Plate.
