Chicken Parmesan Burgers

  1. Blend diced bread and Parmesan cheese using a food processor.
  2. Pulse until you have fine crumbs.
  3. Transfer the crumbs into a pie dish and mix in the 2 tablespoons of minced basil.
  4. Set aside.
  5. Mix marinara and the remaining 2 tablespoons of minced basil in a small saucepan and set aside.
  6. Transfer 1 1/2 tablespoons of the sauce into a large bowl.
  7. Add chicken, onion, and salt.
  8. Sprinkle with pepper to taste and blend.
  9. Shape into four 1/2-inch thick patties.
  10. Coat the patties with the crumbs.
  11. Heat sauce over low heat.
  12. Heat 1 1/2 tablespoons oil in a large nonstick skillet over medium heat.
  13. Cook patties until the bottoms are crusty, 4 minutes.
  14. Turn patties over and top with cheese.
  15. Cook 3 minutes then cover the skillet and cook until the patties are cooked through and cheese is melted, about 1 minute longer.
  16. Butter the bread slices and toast them on a griddle over medium heat until they are your desired color.
  17. Assemble burgers with bread, spinach leaves, basil leaves, and warm marinara piled on top of each chicken patty.
