Toasted Rice and Pasta Pilaf
- 1 tablespoon oil
- 34 cup long grain rice, white
- 2 ounces vermicelli, broken into 1-inch lengths
- 1 small onion, finely chopped
- 1 (14 ounce) can chicken broth
- 1 bay leaf
- 14 cup chopped parsley
- Heat oil in med pan over med.
- heat.
- Add rice and spag.
- cook stirring constantly until golden brown; 3-5 minutes.
- Add onion and cook stirring 3 mins longer.
- Add broth and bayleaf.
- Bring to a boil.
- Lower heat, and simmer covered until rice is tender and broth is absorbed; 15-17 minutes Remove from heat, discard leaf.
- Fluff with fork, stir in parsley.
