Seafood Soup
- 1 teaspoon olive oil
- 1 medium onion, diced
- 4 stalks celery, sliced
- 3 medium carrots, diced
- 2 medium potatoes, diced
- 1 (142 g) can baby clams, with juice
- 1 (120 g) can crabmeat, with juice
- 4 cups chicken stock, low fat, low sodium
- 2 cups half-and-half cream
- salt and pepper

- Place veggies in a large pot with olive oil.
- Sautee over medium heat to get the veggies softened a little.

- Add clams and crab meat.
- Stir to blend.
- 3 Add liquids.
- Simmer for about 20 minutes, until veggies are cooked through.
