Corn and Avocado Salsa
- 16 ounces, weight Frozen Whole Kernel Sweet Corn, Defrosted
- 16 ounces, weight Frozen Super Sweet White Corn, Defrosted
- 1 whole Red Onion, Chopped
- 4 whole Green Onions, Chopped
- 1 whole Red Pepper Chopped
- 1 whole Jalapeno, Chopped
- 1 bunch Cilantro, Chopped
- 1/2 cups Fresh Lime Juice
- 2 cloves Garlic, Chopped
- 1 teaspoon Sugar
- Salt And Pepper, to taste
- 4 whole Ripe Avocados, Diced
- Chips, To Serve
- Combine the corn, onions, pepper, jalapeno, cilantro, lime juice, garlic, and sugar in a large bowl.
- Stir to combine.
- Taste for seasoning and add salt and pepper.
- Right before serving, add the diced avocados and stir gently to combine.
- Serve with chips.
