Lime & Cilantro Potatoes With Zucchini

  1. Heat the oil in a large nonstick wok or frying pan and add the onion.
  2. Stir-fry over medium heat for 5-6 minutes until softed.
  3. Add the cumin seeds, garlic, ginger and turmeric.
  4. Stir-fry for 2-3 minutes and then add the potatoes and the water.
  5. Cook over high heat for 3-4 minutes.
  6. then stir in the zucchini, tomatoes and garam masala.
  7. Stir and cook on high for 3-4 minutes, remove from heat, and stir in the chopped herbs and the lime zest and juice.
  8. Season well and serve immediately.
