Easy! Chestnut Rice
- 20 Chestnuts (large)
- 700 grams White rice
- 2 tbsp Cooking sake
- 1 tbsp Mirin
- 1/2 tsp plus Salt
- Soak the chestnuts in hot water for an hour.
- Remove from the hot water, peel the shells and inner layers, and soak in water in the order peeled (until you've peeled them all.)
- Put the washed rice, sake, mirin, and salt into the rice cooker.
- Add water up to the white rice 2 cup line and give a light stir.
- Scatter the chestnuts on top of everything and leave to soak for 30 minutes.
- Then switch the cooker on as usual.
- When it's done, mix, and serve!
- Avoid crushing the chestnuts when you mix!
