Heirloom Sweet PotatoPraline Pie

  1. Bring medium saucepan of water to boil.
  2. Add unpeeled sweet potatoes, reduce heat and simmer until potatoes are tender, 30 to 40 minutes.
  3. Drain and let cool slightly.
  4. When cool enough to handle, peel sweet potatoes and transfer to medium bowl.
  5. Coarsely mash potatoes (you should have about 2 cups).
  6. Add eggs, brown sugar, butter, evaporated milk, spices and 14 teaspoon salt and mash thoroughly.
  7. Set aside.
  8. Preheat oven to 400F.
  9. Make praline layer: In small saucepan, melt butter with 2 tablespoons brown sugar over medium-low heat, stirring often, until mixture is smooth.
  10. Stir in pecans.
  11. Spread praline mixture over bottom of pie crust.
  12. Spoon filling over praline layer.
  13. Bake pie 10 minutes, then reduce oven temperature to 350F and bake until filling is set, about 45 minutes.
  14. Set pie on wire rack to cool.
  15. Meanwhile, make topping: In small saucepan, melt butter with 1 tablespoon brown sugar over medium-low heat, stirring often, until mixture is smooth.
  16. Add pecans and cook, stirring often, until lightly toasted, about 3 minutes.
  17. Remove from heat and let cool slightly.
  18. Arrange pecan halves decoratively over top of cooled pie.
