Mango Black Bean Quesadillas
- 1 whole Small Red Onion, Diced
- 1 clove Garlic
- 2 Tablespoons Lime Juice
- 1 teaspoon Salt
- 2 teaspoons Cumin
- 1 can (15 Oz. Size) Black Beans
- 1 cup Diced Mango
- 1 Tablespoon Butter
- 5 whole Small To Medium Size Soft Tortilla Shells, More Or Less As Needed
- 1 cup Sliced Sharp Cheddar Cheese
- Heat onion and garlic until slightly soft.
- Add onion and garlic, along with the lime juice, salt and cumin, to the black beans and mango and heat until just warm.
- Butter the pan, lay the tortilla, and layer tortilla with your favorite cheese.
- I used sharp white cheddar because you dont need to use as much to get a big punch of cheesy flavor.
- Add the warmed bean and mango mixture.
- Before you top with another tortilla, add a few more pieces of cheese so the top tortilla will stick.
- Flip it and let it cook a couple minutes until browned.
- Transfer to a plate and try not to let too much of the cheesy goodness fall out.
- Cut into six triangles, because food always tastes better when its in a triangle!
