Mango Black Bean Quesadillas

  1. Heat onion and garlic until slightly soft.
  2. Add onion and garlic, along with the lime juice, salt and cumin, to the black beans and mango and heat until just warm.
  3. Butter the pan, lay the tortilla, and layer tortilla with your favorite cheese.
  4. I used sharp white cheddar because you dont need to use as much to get a big punch of cheesy flavor.
  5. Add the warmed bean and mango mixture.
  6. Before you top with another tortilla, add a few more pieces of cheese so the top tortilla will stick.
  7. Flip it and let it cook a couple minutes until browned.
  8. Transfer to a plate and try not to let too much of the cheesy goodness fall out.
  9. Cut into six triangles, because food always tastes better when its in a triangle!
