Carrot Loaf
- 12 cup applesauce
- 1 teaspoon vanilla
- 34 cup brown sugar
- 2 tablespoons golden syrup
- 2 eggs
- 2 cups carrots, grated
- 1 cup raisins, chopped
- 1 cup walnuts, chopped
- 1 14 cups whole wheat flour
- 2 teaspoons baking powder
- 14 cup ground flax seeds
- 12 teaspoon nutmeg
- 12 teaspoon cinnamon
- Grease a loaf pan.
- Cream butter, sugar and vanilla, beat in syrup, then the eggs one at a time, beat until well combined.
- Stir in carrot, raisins and walnuts.
- (Don't worry if the mixture looks curdled it will come right when the flour is added.)
- Stir in sifted dry ingredients; stir until combined.
- Pour mixture into prepared pan.
- Bake on convection setting at 350 degrees for 50 minutes.
- (Add 1/3 more time for regular oven).
- Stand about 5 minutes before turning on to a wire rack.
