Blackened Onion and Kale Egg Puff

  1. Preheat the oven to 425F Brush saute pan with a little coconut oil.
  2. Place onions in a saute pan over medium heat.
  3. Stir until evenly blackened, but not burnt.
  4. Remove from heat and place in a small bowl.
  5. Place a 9x11-inch baking dish in oven.
  6. Beat eggs with whisk in a large bowl until frothy.
  7. Add milk, flour, psyllium husk, honey, baking powder, sea salt and pepper.
  8. Whisk until smooth.
  9. Add Kale, onions and parsley, and stir well.
  10. Remove baking dish from oven and drop in the butter.
  11. Once melted, pour the batter into the dish, sprinkle with black pepper or paprika, and return to oven.
  12. Bake for 26-30 minutes or until lightly browned and set.
  13. Check with toothpick at 26 minutes.
  14. Let cool slightly and serve with salad of your choice.
  15. Good cold too!
