Oat Bran Blueberry and Nut Muffins
- 1 1/2 cups bran
- 1 1/2 cups flour, all-purpose
- 1/2 cup brown sugar packed
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon cinnamon ground
- 1/2 teaspoon salt
- 118 cups applesauce
- 1/2 cup liquid egg substitute
- 2 tablespoons canola oil
- 1 teaspoon vanilla extract
- 1 1/2 cups blueberries
- 1/4 ounce pecans chopped
- 1/2 cup granola low-fat
- Preheat oven to 400F (200C) (200 degrees C).
- Coat 12-cup muffin pan with cooking spray.
- In a large bowl, add the oat bran, flour, brown sugar, baking soda, baking powder, cinnamon, and salt, mix well.
- In another medium bowl, combine together the applesauce, egg substitute, canola oil, and vanilla extract.
- Slowly add the applesauce mixture into the flour mixture, stir until just combined.
- Gently fold in the blueberries and pecans.
- Spoon the batter into the prepared muffin cups.
- Sprinkle batter with granola, and press granola lightly to make it stick.
- Bake about 18 minutes, or until a wood stick inserted into a muffin comes out clean.
- Cool on a wire rack.
