Holiday Pumpkin Bars Recipe
- 1/2 c. butter
- 1 c. brown sugar
- 1 1/2 c. flour
- 1 c. oats
- 1 teaspoon baking pwdr
- 1/2 teaspoon salt
- 2 c. pumpkin
- 2 beaten Large eggs
- 1 c. nuts
- 1 can Eagle Brand lowfat milk
- 1 1/2 teaspoon vanilla
- 2 teaspoon pumpkin pie spice
- 1/8 teaspoon salt
- Beat till fluffy the butter and brown sugar.
- Add in the flour, oats, salt and baking pwdr.
- Mix till crumbly.
- Reserve 1/2 c. for topping and press the rest onto bottom of pan.
- Bake 20 min at 350 degrees.
- While baking, mix pumpkin, Large eggs, Eagle Brand lowfat milk, vanilla and pie spice.
- Spread over baked crust.
- Add in the nuts to the reserved crumbs and sprinkle over the pumpkin.
- Bake for 30 to 35 min; cold thoroughly before sifting powdered sugar on top.
