Crab and Potato Cakes
- 1 12 lbs potatoes
- 1 lb crabmeat
- 2 ounces fresh dill, finely chopped
- 2 ounces fresh chives, finely chopped
- 4 tablespoons light mayonnaise
- cooking spray
- Peel and roughly chop the potatoes.
- Boil in a large pan of salted water for 10-12 minutes or until just tender.
- Drain and mash and allow to cool completely.
- Combine the potatoes, crabmeat, herbs and mayonnaise in a mixing bowl.
- Shape into 8 cakes.
- Cover and chill for 6-8 hours.
- Spray a large non stick frying pan with cooking spray.
- Cook the cakes for 3-4 minutes on each side or until lightly browned.
- Serve immediately with a green side salad.
