Crab and Potato Cakes

  1. Peel and roughly chop the potatoes.
  2. Boil in a large pan of salted water for 10-12 minutes or until just tender.
  3. Drain and mash and allow to cool completely.
  4. Combine the potatoes, crabmeat, herbs and mayonnaise in a mixing bowl.
  5. Shape into 8 cakes.
  6. Cover and chill for 6-8 hours.
  7. Spray a large non stick frying pan with cooking spray.
  8. Cook the cakes for 3-4 minutes on each side or until lightly browned.
  9. Serve immediately with a green side salad.
