Italian Turkey Cutlets

  1. Heat a skillet over medium heat.
  2. Drizzle with olive oil.
  3. Season both sides of turkey with salt and pepper.
  4. Once the pan is hot, brown one side of the turkey cutlets.
  5. Turn them over and top with pesto, tomatoes and cheese.
  6. Cover the pan, leaving a slight opening.
  7. Cook until cheese is melted, and turkey is cooked through.
  8. This should take approximately 5 minutes per side.
