Mom Mom's Potato Salad
- 5 lbs golden yukon gold potatoes
- 12 lb bacon
- 1 large yellow onion, dices
- 12 cup Spanish olives, sliced
- 3 large sliced celery ribs
- 8 large eggs
- 1 12 cups mayonnaise
- 2 tablespoons of minced garlic
- 1 teaspoon salt
- 2 teaspoons black fresh coarse ground black pepper
- 1 tablespoon celery seed
- 1 teaspoon crushed red pepper flakes
- Peel and cook Potatoes, Do not rinse, then cut into cubes.
- Fry Bacon to Crisp and Chop in Small Pieces - Reserve 2 Tbsp of Bacon Drippings.
- Hard Boil Eggs, then peel and dice.
- Chop, Dice, and Slice Vegetables.
- In a very large bowl, add potatoes, bacon, and eggs while they are still warm.
- Add in onions then all of the other ingredients.
- Stir while still warm, add mayo if needed.
- Cover and refrigerate for at least an hour prior to serving.
