Yuca Fries with Spiced Mayo
- 3/4 cup Real mayonnaise (not fat-free)
- 1 tsp. real lime juice
- 1 tsp. hot paprika
- 1/2 tsp. ground cumin
- 1/2 tsp. minced garlic
- 4 cups water
- 1 qt. cooking oil for frying.
- 2 lb. fresh yuca, scrubbed, peeled and cut into 2x1/2-inch pieces
- In a medium bowl, mix the mayonnaise, lime juice, garlic,paprika and the ground cumin; cover and chill.
- Bring water and salt to a boil in a 3 quart saucepan.
- Add the yuca and boil for 30 minutes or until tender.
- Drain and chill.
- Heat the oil in a sauce pan over medium heat and fry the yuca in two batches for about five minutes or until crisp.
- Drain on paper towels.
- Add more salt if you like and serve with the now chilled spiced mayonnaise.
