Grilled Steak

  1. In a dish put steak, garlic, thyme, and olive oil.
  2. Turn the steak in the ingredients a few times and allow to marinate in the refrigerator for 1 hour.
  3. Heat a grill or skillet with grill ridges to high heat.
  4. Before grilling, remove garlic, and thyme from steak.
  5. Season well with salt and pepper, and grill to desired doneness.
  6. Serve steak with Gorgonzola cream sauce, spinach, and Matchstick fries.
  7. 2 tablespoons unsalted butter
  8. 2 tablespoons onions, finely diced
  9. 1 tablespoon fresh thyme leaves
  10. 1 tablespoon all-purpose flour
  11. 1 cup heavy cream
  12. 2 tablespoons sherry
  13. 1/2 to 1 cup Gorgonzola, Danish bleu, or Stilton cheese
  14. Kosher salt
  15. Freshly ground black pepper
  16. In a small saucepan, melt the butter.
  17. Add the onions, and thyme, then whisk in the flour.
  18. Cook the flour for 1 minute.
  19. Add heavy cream and sherry, and continue to whisk.
  20. Bring the mixture to a simmer to allow flour to cook out.
  21. After cream simmers for about 2 minutes, add the cheese to melt.
  22. Season with salt and pepper.
  23. Yield: about 2 cups
  24. 2 tablespoons extra-virgin olive oil
  25. 2 garlic cloves, sliced
  26. 1 bunch fresh spinach, cleaned well
  27. Kosher salt and freshly ground black pepper
  28. Heat a skillet to almost smoking.
  29. Add the olive oil, garlic, and spinach.
  30. Saute quickly, turning the spinach over in the pan, season with the salt and pepper.
  31. When spinach is just wilted in the pan it is ready.
  32. Remove from the heat and serve.
  33. Matchstick Fries:
  34. Oil, for frying
  35. 2 white creamer potatoes, or Yukon golds, peeled, and juilienned
  36. Kosher salt
  37. Fill a deep pot halfway full with oil.
  38. Heat the oil to 350 degrees F. Carefully add the potatoes to the hot oil and fry for 1 minute.
  39. Drain and reserve.
  40. When you are ready to serve the potatoes, make sure your oil is at 350 degrees F, and fry until crisp, and golden.
  41. Drain the fries on a paper towel and season with salt, to taste.
