Breakfast Fruit Bars Recipe
- 1 1/2 c. Uncooked oatmeal
- 1 c. Flour
- 1/2 c. Brown sugar, packed
- 1 tsp Cinnamon
- 1/2 tsp Baking soda
- 1/4 tsp Salt
- 1 c. Orange juice
- 1/4 c. Vegetable oil
- 1 x Egg, lightly beaten
- 1 tsp Vanilla
- 6 ounce Diced dry mixed fruit
- 2 Tbsp. Oats
- Combine 1 1/2 c. oats, flour, sugar, cinnamon, soda and salt.
- Combine juice, oil, egg and vanilla and add in to dry ingredients.
- Mix well.
- Stir in fruit.
- Spread into a 13x9 inch pan which has been sprayed with no-stick cooking spray.
- Sprinkle with remaining oats.
- Bake at 375 for 20-22 min or possibly till lightly browned and edges pull away from sides of pan.
- Cold completely.
- Cut into bars.
- Store tightly covered.
- (Bars may also be frzn in individual bags.
- Thaw at room temperature or possibly microwave on high for 30 seconds per bar.)
- Makes 20 bars.
