Super Skillet Nachos
- 1 lb. ground beef
- 1 medium onion, chopped
- 2 c. Picante sauce (plus extra for topping)
- 1 (15 oz.) can pinto or black beans, rinsed and drained
- 1 tsp. chili powder
- 1 large tomato, chopped
- 1/2 c. sliced black olives
- 1 c. shredded Cheddar cheese
- 1/2 to 1 c. sour cream (as desired)

- In large skillet, brown beef with onions; drain the liquid. Add the 2 cups picante sauce, beans and chili powder and bring to a boil.
- Reduce heat and simmer, uncovered, for 5 minutes.
- Stir in the tomato and olives.
- Remove from heat and sprinkle the shredded cheese over the top.
- Spoon sour cream onto the center of the meat mixture.
- Place a row of tortilla chips around the edge of the skillet and serve immediately with additional chips and picante sauce.
