Tinga!

  1. boil the chicken thighs with the garlic, onion and bay leaves until chicken is tender
  2. in a pan cook the strips of bacon.
  3. once cooked remove from the pan and cook the chorizo.
  4. shred the chicken, do not discard the water you cooked it in!
  5. place all of your ingredients, except the chicken, in a blender until you get a somewhat thick, reddish sauce.
  6. put the shredded chicken in a pot and dump the sauce over the chicken, stirring until all chicken is covered.
  7. bring to a boil.
  8. serve in tacos or in any way you prefer :)
