Tinga!
- 3 lb chicken thighs
- 1 packages of chorizo
- 3 strips of bacon
- 1/2 medium onion
- 3 bay leaves
- 1 small tomato
- 2 tbsp vinegar
- 1 small package of achiote
- 1 salt and pepper to taste
- 1 clove of garlic
- 1 can chipotle chiles (I only use 2-3 chiles from the can)
- boil the chicken thighs with the garlic, onion and bay leaves until chicken is tender
- in a pan cook the strips of bacon.
- once cooked remove from the pan and cook the chorizo.
- shred the chicken, do not discard the water you cooked it in!
- place all of your ingredients, except the chicken, in a blender until you get a somewhat thick, reddish sauce.
- put the shredded chicken in a pot and dump the sauce over the chicken, stirring until all chicken is covered.
- bring to a boil.
- serve in tacos or in any way you prefer :)
