Blackened Catfish
- 1 ounce salad oil
- 2 (5 to 8-ounce) catfish fillets
- 2 ounces fish blackening seasoning
- Heat a 12-inch cast iron skillet over high heat.
- When the skillet is hot, add the oil.
- Season both sides of each catfish fillet with the blackening seasoning and place in skillet.
- Cook fillets for 5 minutes on each side.
