Blueberry Ginger Muffin Tops Recipe

  2. Preheat oven to 40 degrees.
  3. Grease a cookie sheet.
  4. Combine oats and sugar.
  5. Remove 1/4 of mix to separate bowl, fold in 1 Tbsp.
  6. of the melted butter and set aside for topping.

  8. For muffins, mix flour, baking pwdr, ginger and remaining 3/4 oats mix.
  9. In a separate bowl, combine lowfat milk, remaining 4 1/2 Tbsp.
  10. melted butter and egg.
  11. Mix wet and dry ingredients just till moistened.
  12. Stir in blueberries.

  14. Drop 1/4 c. of batter in round shapes proportionately on cookie sheet.
  15. Sprinkle each with topping and pat gently.
  16. Bake 20 to 22 min, just till muffin tops spring back when lightly touched.
