Sriracha and Bacon Potato Salad
- 3 lb potatoes, peeled and cubed
- 2 1/2 tbsp white vinegar
- 1/4 tsp salt
- 3/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp sriracha chili sauce
- 1 each onion, small and chopped
- 6 each bacon slices fried crisp
- 1/4 cup chives, chopped
- Bring a stock pot of water to a boil and cook your potatoes to fork tender.
- Drain the potatoes well and cool a bit
- Add the next 6 ingredients to potatoes and mix well.
- Top with crumbled bacon, chives and paprika
- Refrigerate until serving
