San Diego's Hotel Del Coronado Borscht Recipe
- 3 lg. beets (2 1/2"), scrub thoroughly, but don't break skin
- 2 lg. cloves garlic, peeled & crushed
- Cover above ingredients with water and cook till tender.
- Remove beets from water.
- Reserve the cooking water.
- Skin and throw away the skin.
- In blender, blend beets with 1 c. reserved liquid; add in:
beets, cloves garlic
