Yam and Tomato Salad
- 1 lb. yams, peeled, cut into 1-inch pieces (about 3 cups)
- 1 cup KRAFT Zesty Italian Dressing
- 2 cloves garlic, minced
- 1 tsp. adobo seasoning
- 3 medium tomatoes, cut into thin slices
- 1 medium onion, cut into thin slices King Sooper's 1 lb For $0.99 thru 02/09
- 1/4 cup KRAFT Shredded Mozzarella Cheese
- Cook yams in boiling water 5 min.
- or until yams are almost tender; drain.
- Place in large bowl; cool.
- Place dressing, garlic and adobo seasoning in blender container; cover.
- Blend on medium speed until well blended.
- Pour over yams; cover.
- Refrigerate 30 min.
- to marinate.
- Drain yams, reserving the marinade.
- Arrange tomatoes in single layer on large platter; top with the onions and yams.
- Drizzle with the reserved marinade.
- Sprinkle with cheese.
