Parmesan Crusted Chicken for 2
- 2 Chicken Breasts
- 1/2 cup Freshly Grated Parmesan Cheese
- 1/4 cup Plain Panko Bread Crumbs
- 1/4 tsp Italian Seasoning
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1 Egg
- 1/2 cup Shredded Mozzarella
- 2 slice Bacon, cooked and crumbled
- Pre-heat oven at 400F.
- Spray a cooling rack with cooking spray and put on a baking sheet.
- Add egg to a bowl and scramble.
- Combine Parmesan cheese, bread crumbs, and seasonings in a round cake pan (a medium size bowl works too).
- Dip the chicken breast in the egg and then the Parmesan mixture.
- Place chicken on rack and bake for 45 minutes.
- With about 5-10 minutes left, top the chicken with the mozzarella and then the bacon.
