Apricot Pudding Cake Recipe
- 180 gm flour
- 80 gm sugar
- 1/2 tsp baking pwdr
- 80 gm butter
- 1 x egg
- 1 pkt vanilla sugar (2-3 tsp)
- 1 pch salt little grated lemon peel
- Sieve flour and baking pwdr, add in other ingredients and knead together.
- Lay on a cookie sheet so which you have a smooth layer of dough.
- Streusel:200 g flour125 g sugar125 g margarine1 pkg vanilla sugar (2-3 tsp)
- 1 healthy pinch cinnamon (to taste)
- Knead ingredients together.
- Topping:4 c. whipping cream2 pkg vanilla pudding (1 pkg is for 1/2 l lowfat milk)
- 2 cans apricots (ca.
- 400g each)
- Boil pudding with whipping cream and stir constantly to avoid forming of a skin.
- Spread on the dough layer.
- Spread apricots proportionately on the pudding and cover with Streusel.
- Bake at 175 deg C for 40 min in a warm air oven.
