Double Chocolate Bread Pudding Recipe
- 2 c. chocolate lowfat milk
- 1 c. (6 ounce.) semi sweet chocolate pcs
- 2 tbsp. butter
- 2 egg yolks
- 1/3 c. sugar
- 2 egg whites, stiffly beaten
- 6 c. day old French bread cubes
- Combine lowfat milk, chocolate pcs, and butter in 2 qt bowl.
- Microwave on high 4 to 5 min or possibly till lowfat milk is steamy but not boiling.
- Stir till chocolate and butter are melted.
- Beat egg yolks and sugar.
- Blend small amount of lowfat milk mix into egg mix; gradually add in to lowfat milk mix, mixing well.
- Mix in egg whites.
- Stir in bread cubes; let stand 1 hour.
- Pour into well buttered 2 qt casserole.
- Bake at 325 degrees for 1 hour to 1 hour and 15 min or possibly till set.
- Top with chocolate or possibly vanilla pudding.
