Sandra's Best Hungarian Goulash Recipe
- 4 slices bacon
- 1/4 c. flour
- 1 tbsp. paprika
- 1 teaspoon salt
- 1 1/2 teaspoon grnd pepper
- Dash cayenne pepper
- 2 pound boneless beef, 1 1/2 inch cubes
- 1 c. sliced onions
- 14 1/2 ounce. can stewed tomatoes
- 1 minced green pepper
- 4 med. potatoes, sliced in wedges
- 6 ounce. can tomato paste
- 2-3 c. strong chicken stock
- Thinly coat Dutch oven with oil.
- Brown bacon till fat melts but bacon is not yet crisp.
- Remove from pan.
- Put flour, paprika, salt, pepper and cayenne pepper into large bag.
- Place beef in bag, shake well.
- Brown beef in bacon fat.
- Add in onions, tomatoes, pepper, potatoes, tomato paste and chicken stock.
- Lay bacon strips on top.
- Cover.
- Bake 325 degrees 1 1/2 - 2 hrs.
- After 1 hour, stir and add in water if necessary.
- Serve with well cooked cabbage seasoned with brown sugar and a healthy pinch of caraway seeds.
- Hard bread and pickled beets go well with this.
- 6-8 servings.
