Stuffed Green Peppers
- 6 medium to large green peppers
- 1 lb. ground turkey or ground beef
- 4 peeled tomatoes, fresh or canned
- 1 small onion
- 1/2 c. Minute rice
- 1 Tbsp. Worcestershire sauce
- 1/2 tsp. salt and pepper
- 1/4 lb. Velveeta light cheese, sliced
- Preheat oven to 375u0b0.
- In large skillet, brown ground turkey or beef.
- In large saucepan, bring to boil water to cook peppers for 5 minutes (peppers have had the tops cut off, chop up tops to add to the cooked meat, without stems).
- Remove peppers from water, drain and salt insides.
- Add to browned meat the tomatoes, onion, chopped pepper tops, Worcestershire sauce, salt and pepper.
- Cook until onion and etc. are soft.
- Add 1/8 pound Velveeta cheese (sliced up) to meat mixture and Minute rice.
- Cover and simmer for 5 minutes. Fill the peppers to top and use remaining Velveeta to top the filled peppers.
