African Beef Stew
- 2 tsp. vegetable oil
- 1 1/2 c. chopped onions
- 1 lb. lean ground beef
- 1 1/2 c. chicken broth
- 1/2 c. chunky or smooth peanut butter
- 1/4 c. tomato paste
- 1/2 tsp. salt
- 1/4 tsp. ground red pepper (cayenne) or to taste
- 2 1/2 c. frozen chunks butternut squash from 20 oz. bag
- Heat oil in a large, preferably nonstick skillet. Stir in onions and cook over medium-high heat 4 to 5 minutes until translucent.
- Add beef and cook 5 minutes, stirring with a fork to break up chunks, or until browned.
- Drain off fat.
- Stir in broth, peanut butter, tomato paste, salt and red pepper until well blended (mixture will thicken).
- Stir in squash, reduce heat, cover and simmer 5 to 7 minutes until
- squash is hot.
- Uncover and simmer 5 minutes longer for flavors to blend.
